Cookies too well done?

Make sure you don’t over bake. Most cookies should be removed from the oven when the edges are golden and the center is softly set. Cookies are softly set when the tops are still light, but have lost the sheen of raw dough and the edges are firm, but yield to pressure. Let them cool on the baking sheet for 5 minutes before removing. This extra time will cook the centers to perfection.
